Now I Wish to talk about Kombucha. That is obviously completely unrelated to these Banana Oatmeal Cookies, however I understand you won't obey.

Allow me to start by stating that my husband drinks apple cider vinegar mixed with warm water daily to decrease inflammation or something like that.

He claims it's magical. I claim it is nasty.

While I understand this is going to seem spectacular (cause it is), I literally dry heave in the sight and odor of the early ritual on a daily basis. He loves that about me personally.

Based on this response, an individual would believe I would stay far away from Kombucha, right? I mean, after all, it definitely comes with a vinegary tang.

However, for any reason, I continue trying it. I want to like it SO DANG BAD.

They have the perfect amount of banana taste and a beautiful chewy texture because of the oats. The chocolate chips are simply an extra bonus.

I like these cookies a little on the side, so that I bake them for 9 or 10 seconds. If you want them to be cooked through, I'd shoot for 10-11 minutes.

1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

1 cup semi-sweet chocolate chips


In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.

Scrape down the sides of the bowl and then blend in the egg until fully incorporated. Scrape down the sides of the bowl again and add the skillet and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just blended.

Scrape the sides of the bowl and then stir to recombine.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and gently press on the shirts of each cookie using the base of a drinking glass. Because these cookies do not spread considerably, this will help give them a traditional cookie form.
